"Ulundu Wade"
The favorite snack of the Indian people ...
Required Materials:
2 cups of good udu nuts
5 raw chilli pods
An inch piece of ginger
A medium-sized square bean sprout
One and a half tablespoons of ginger seeds
One teaspoon of chopped chili
Half a teaspoon of pepper
🌾 Salt to taste
About 25 curry leavessels
Perumkayam teaspoon time (if available)
Method of creation:
Leave to soak overnight throughout the oven. The next day, drain all the water, leaving only a small amount (about two tablespoons) and blend well. Or grind on a stone. Now put the minced onion mixture in a bowl and leave it in a warm place to simmer for about 4 hours. In cold regions it does not bloom well due to insufficient heat ... then add half a teaspoon of baking soda to it. After 4 hours, take this mixture and set aside.
Next, take a blender and add raw chillies, ginger, fennel powder, salt, ginger, curry leaves, chopped chillies and pepper and blend until smooth.
Now mix this onion and raw chilli mixture well with the udu mixture made earlier. Add the required amount of salt. Now the Ulundu Wade butter is ready ...
Next, take a deep frying pan and grease it well. Now rub your hands well and take some of the wade mixture to the size of a large lime. Place it on the right side, flatten it a little on the left side, make a hole with the thumb and carefully dip it into the oil.
Turn over and fry on both sides. Place the fried wade on a clean piece of paper and save the oil. Serve with a delicious coconut or chili chutney.
