"The Foundation of Fine Soups: Homemade Chicken Stock Recipe"

Here's my go-to recipe for homemade chicken stock, which is both simple to prepare and packed with flavor. I often prepare extra batches and freeze them for future use.

- 1 Whole Chicken, approximately 3 pounds
- 8 cups of water
- 2 carrots, cut into 2-inch pieces
- 2 stalks of celery, cut into 2-inch pieces
- 1 medium onion, chopped into large chunks
- 2 cloves of garlic, crushed
- 2-3 sprigs of parsley
- 1-2 sprigs of sage
- 2 sprigs of rosemary
- 2 sprigs of thyme
- 2 teaspoons of salt

- Cut the whole chicken into pieces.
- Place the chicken pieces, along with all the other ingredients, into a large pot, and bring it to a boil.
- Reduce the heat to medium-low and let it simmer for 3 hours.
- Remove the chicken from the pot and allow it to cool in a separate bowl.
- Pour the stock through a colander lined with cheesecloth, and refrigerate it until chilled.
- Once the chicken has cooled sufficiently, remove the skin and bones, and store the chicken in the freezer or refrigerator for future use.
- Skim off any excess fat from the stock, and you can either refrigerate it, freeze it, or use it right away.
- Yield: This recipe yields approximately 6 cups of chicken stock and about 4 cups of cooked chicken.
- Feel free to get creative with your stock. Experiment with different herbs for unique flavors or consider adding ginger peels and lemongrass for an Asian twist. The possibilities are endless.
- You don't necessarily need a whole chicken either; bone-in chicken breasts work well. Remove the bones before cooking, and freeze them in a plastic bag until you're ready to make the stock.
